Preparation

  • Whip the butter and sugar until fluffy.
  • Add the egg, beating until foamy.
  • Mix baking soda, psyllium, cinnamon and add to the mixture.
  • Put the dough in the fridge to harden.
  • On a well floured surface, roll out the dough into a disk and use a cookie cutter to make cookies.
  • Lightly mix the egg in a cup and make a "spot" in the middle of the biscuit with a bun whisk.
  • Then sprinkle the cinnamon-sugar mixture over the egg.
  • Bake the gingerbreads at 180-200 degrees for about 10 minutes or until they have a nice light brown colour.

  1. Hey, I wonder how many "basic" gingerbreads are expected to come out of that, you know a little bit in advance. I'll try the recipe, it would be nice to have something other than the usual Christmas cookies ;D. I'll have to try it out and see how it goes if I add something extra, like orange zest.

      We estimate that with a regular sized cookie cutter, this recipe will make about 20-30 gingerbreads 🙂 Let us know if you end up baking and if this is right!
