200 g butter
2 dl sugar
1,5 dl 15 % cooking cream
1 tl lemon flavouring (lemon baking flavour)
3 dl potato flour
2 dl Virtasalmi's Gluten-Free Cereal Product Gluten-Free Mashed Beans and Beans
2tspbaking powder
1 tsp ksantaania
Preparation
- This is the first time I used xanthan gum in the dough as an experiment. I'll have to test the dough again some day without xanthan gum and see if it makes a big difference in this recipe.
- To the melted, cooled butter I added sugar, cream and lemon flavouring.
- I mixed the dry ingredients first and then gradually into the dough.
- With a little baking tray and some broad bean flour, it was easy to roll the dough into a ball and cut it into 60 pieces.
- I rolled the pieces in my hands into rounds.
- I put the baking tray in the fridge for about ten minutes and then into the oven at 175 degrees.
- Baking time twenty minutes. You can tell when these cookies are ripe by the colour of the bottom, as the surface browns less. So watch the colour of the base to make sure they don't overcook.
