Gluten-free Briossi Hamburger Buns

fromA burger buffet is a great way to serve food - especially when you have a wide range of diets and allergies. With separate ingredients, everyone can put together a burger that's just right for them. Best of all, these buns hold up well to toppings but are still wonderfully soft on the inside.
Ingredients
14 g Cereal product Gluten Free Psyllium
280 g warm water
120 g warm milk (or plant-based milk)
2 pcs eggs
50 g rapeseed oil
230 g Cereal product Gluten Free Bun Flour Mix
50 g sugar
8 g dry yeast
8 g baking powder
12 g salt
Preparation
- Mix psyllium and water. Allow to swell for 5-10 min.
- Add the milk, eggs and oil to the psyllium gel. Mix until smooth.
- Mix the dry ingredients together and add to the dough. Knead for about 5 minutes with an electric mixer. The dough should be soft but malleable.
- Divide the dough into 8 parts. Shape into rolls on a baking tray, using flour if necessary (bun flour mix).
- Soak under a cloth in a warm place for 45-60 min. Bake at 200 °C (top-bottom heat) for 20-25 min until golden brown.
- Cool on a wire rack before splitting.
