Ingredients
5 dl milk
50 g yeast
2 tsp Pomeranian shell
1 tsp fennel seeds
1 tsp aniseed seeds
1tspsalt
0,5 dl rapeseed oil
1 dl syrup
3dlVirtasalmen Viljatuote's gluten-free dark wholegrain teff flour
3 dl Virtasalmi Grain Products Light Gluten Free Flour Puree
- For lubrication

Preparation
- Warm the buttermilk to hand temperature.
- Dissolve the yeast in the buttermilk and stir in the psyllium.
- Let the psyllium swell for about 5 minutes.
- Grind the spices finely. Gradually add the spices, salt, syrup, oil and flour to the dough, starting from the beginning.
- Knead carefully, either by hand or by machine.
- On a floured surface, bake two round loaves of dough.
- Rise for about 45-60 minutes in a warm place under a cloth. Prick the surface of the bread with a fork before baking.
- Bake at 200 degrees for about 40 minutes.
- At the end of the baking process, brush the bread with the syrup and water mixture.
Tip
- Gluten-free Christmas bread rises well when you put it in the oven on a baking tray and a hot kettle of boiling water under the oven.
Hello wonderful employees of Virtasalmen Viljatuote! I have often made all kinds of pastries with your products, and the results have always been excellent. Now I made a gluten-free Christmas bread for myself for Christmas. I measured the ingredients carefully as I always do. The dough was surprisingly loose! I added more flour to the dough so that I could roll the dough into loaves on a floured workbench. What did I do wrong? A very Merry Christmas from Helena from Hämeenlinna

What a strange and annoying problem! Surely you remembered to add the teff flour and the all-purpose flour mix? That's 6 dl of flour and 2 tsp of psyllium.
I've found that when I make the dough on the machine and knead it for a long time, it makes a better dough and the flour tends to swell.
The cereal recipe is the only decent bread I've ever made.

Psyllium is written a bit long "Virtasalmen Viljatuote Gluten Free Psyllium". It comes in 2 teaspoons for a Christmas cookie 🙂 🙂
I made Christmas bread for the second time today, kneading the dough on the machine.

The first time I used ground orange peel 2 tsp I thought the bread tasted bitter. Now the second time I put only 1 tsp I thought it was the right amount.
Hey, yes there is good bread.
I did take the easy way out and put the dough in a loaf pan. It worked well that way too, the last time I made it in slips.
