Preparation

  • Heat the yoghurt or cream until lukewarm, dissolve the yeast and mix in the buckwheat flour and sugar.
  • Let the dough rise for a couple of hours at room temperature or longer in a cooler place.
  • Before baking, mix the hot milk, salt, butter, egg yolk and the whipped egg whites last.
  • Fry the dough in a blini or thin pan in butter over a low heat to make thick blinis.
  • Enjoy with, for example, sour cream, mushroom salad, pickled cucumbers, mussels and red onion puree.

  1. This recipe has been used to make blinis for many years. An excellent recipe, always successful and always tasty. The buckwheat flavour comes through perfectly when the wheat is not mixed in. Nam nam. Thank you.

  2. I think this is the same recipe as on the side of the buckwheat flour packet.

    Following the instructions to the letter, I made heavenly good blinis.
