Gluten-free and vegan, this apple-toscotti cake is full of autumnal flavour thanks to the lingonberries and apples! The perfect coffee table treat!

Ingredients

Preparation

  • Preheat the oven to 200°C. Line the bottom of a loose baking dish (approx 22 cm) with baking paper. Mix the dry ingredients. Add the melted margarine and the oatmeal. Mix the dough until smooth and pour into the loose pan. Arrange the apple slices and lingonberries evenly over the pie crust. Sprinkle cinnamon on top.
  • Bake on the bottom shelf of the oven for 30-35 minutes, or until the cake is set in the middle.
  • Boil the toscakuorrute in a saucepan for a few minutes. Spoon the icing over the pre-baked cake and bake for another 10 minutes, or until the gluten-free and vegan apple toffee cake is golden brown.

  1. I guess this recipe must be missing an egg?! Can't have a cake without an egg, can it?

      This cake works great without any eggs 🙂 It's a gluten-free and vegan cake, so there's a reason why the egg is left out!
