Slowly, the blintz season has also started to make its appearance in restaurants and home kitchens in Finland. The recipe below is an easy way to make gluten-free blinis without a long leavening time. Traditionally, blinis are served with roe, sour cream and red onion, but you can vary the toppings to suit your taste. For example, gravad salmon and a variety of vegetables are perfect for warm blinis.

GLUTEN-FREE DOUGHNUTS

This doesn't make it any easier to make doughnuts. You can make these with Virtasalmen Viljatuote Gluten Free Light Flour Mix or Gluten-free bun flour mix. You can find doughnut rolls at most major supermarkets and online baking supply stores.

GLUTEN-FREE YOGHURT CAKE

This yoghurt cake is quick and easy to prepare for the coffee table. To make it even more festive, you can decorate it with a powdered sugar icing. Measure 3 dl of icing sugar into a bowl. Add 2 tablespoons of liquid (e.g. water or lemon/orange juice) and then 1-2 tablespoons more if necessary, to make a frosting of the right thickness. You can flavour the icing with vanilla flavouring, for example, if you like.
