1 dl milk/water
1 tbsp baking powder
0,5 tl salt
0,25tspblack pepper powder
0,5 dl dried prunes, chopped
0,5 dl chopped dried apricots
0,5 dl sunflower seeds
0,5 dl chopped nuts (e.g. walnut)
150 g goat's or blue cheese
4 eggs
0,5 dl oil
0,5 dl sour cream
Preparation
- Put the psyllium to swell in milk/water.
- Mix the flour, baking powder, salt and black pepper in a bowl.
- Mix carefully. Chop the plums, apricots, nuts and goat cheese.
- Add the chopped ingredients, milled flaxseeds and sunflower seeds to the dry ingredients.
- Beat the eggs until light and whisk in the psyllium-milk mixture, oil and cream.
- Then pour the egg whites into a dry mixing bowl, and gently turn the dough to mix.
- Pour the dough into a greased and floured loaf pan and bake in a 180°C oven for about 40 minutes.
- Test the ripeness with a stick! Let the bread cool in the pan

Tip
- You can use other nuts than walnuts, such as pistachios or cashews.
- Crushed buckwheat groats, milled flaxseeds or buckwheat bran are ideal to flour pans.
