Ingredients
1,5 dl milk (soya, oat, lactose-free...)
2 eggs
2tspbaking powder
1 tsp psyllium
1 tl vanilla sugar
2,75 dl Virtasalmi Grain Product Gluten Free Fine Rice Flour
2,75 dl Virtasalmi's Grain Product Gluten Free Dark Whole Grain Rice Flour
1,5 dl sugar
200 g gluten-free and dairy-free dark chocolate
Preparation
- Preheat the oven to 180 degrees.
- Melt 125 g of chocolate.
- Mix the dry ingredients together and add the soy milk, eggs and melted chocolate.
- Mix until smooth.
- Cut the rest of the dark chocolate into chips and add to the dough.
- Divide the batter into muffin tins and bake for 20 - 25 minutes.
- Gluten-free chocolate muffins are best when slightly cooled.
