Healthier gluten-free pumpkin chocolate muffins are easy to make and even easier to enjoy!

Ingredients

Preparation

  • Mix together the maple syrup, coconut sugar, eggs, peanut butter and vanilla extract. Add the pumpkin puree and stir. In another bowl, combine the flour, baking powder, baking soda and spices. Add half of the flour and almond milk to the dough and mix. Add the remaining flour and milk and mix. Stir in the chocolate chips.
  • Spoon into muffin tins (about 3/4 full). Bake at 180°C for about 15 minutes. You can use a toothpick to test for doneness.
  • Gluten-free pumpkin chocolate muffins are ready to eat.
