These lovely banana muffins are made from Virtasalmen Viljatuote's gluten-free teff flour.

Ingredients

Preparation

  • I whisked the eggs and sugar first.
  • Then I added alternately mashed bananas, flour+baking powder+psyllium mixture and the rest of the ingredients.
  • The batter made 14 muffins (I have to admit, I must have tasted the batter for one muffin, it was that good).
  • The oven thermometer read 250 degrees when I put the muffin pan in the oven and baked for 15 minutes.
  • In an electric oven, 200 degrees is probably enough, the baking time maybe a little longer.
  • I used paper liners in the muffin pan and the muffins were left to cool until the next day, when the paper liners came off nicely.
  • Then top with Irish cream for icing and freeze-dried raspberries for decoration.
