These lovely banana muffins are made from Virtasalmen Viljatuote's gluten-free teff flour.

3 eggs
1 dl sugar
2,5dlVirtasalmen Viljatuote's gluten-free dark wholegrain teff flour
1,5 tsp baking powder
0,5 dl oil
3 dl unflavoured yoghurt
1 tsp lemon-flavoured
200 g banana
Preparation
- I whisked the eggs and sugar first.
- Then I added alternately mashed bananas, flour+baking powder+psyllium mixture and the rest of the ingredients.
- The batter made 14 muffins (I have to admit, I must have tasted the batter for one muffin, it was that good).
- The oven thermometer read 250 degrees when I put the muffin pan in the oven and baked for 15 minutes.
- In an electric oven, 200 degrees is probably enough, the baking time maybe a little longer.
- I used paper liners in the muffin pan and the muffins were left to cool until the next day, when the paper liners came off nicely.
- Then top with Irish cream for icing and freeze-dried raspberries for decoration.
