Gluten-free texmex mince pies are perfect for dinner parties and savoury lovers! No expense is spared on the mince so the filling is filling enough to satisfy even the hungriest of eaters. The pie base doesn't overshadow the filling in taste either, thanks to Grain Product's Gluten-free dark flour mix.

Preparation

  • Preheat the oven to 225 degrees. Grease a large pie dish (diameter 28-30 cm) with margarine.
  • Prepare the base dough. Mix the dry ingredients together. Chop the margarine and fold it into the dry ingredients. Finally, add cold water. Mix until smooth. Transfer the dough to the refrigerator to rest.
  • Finely chop the onions. Dice the paprika and finely chop the coriander. Lightly fry the onions in a frying pan in a little oil. Add the minced meat in small cubes. Add to the browned minced meat and onion mixture, the diced peppers and the taco sauce. Simmer for a couple of minutes. Remove the filling from the heat to cool.
  • Press the pie dough on the bottom and sides of the greased pan with your fingers moistened with water.
  • Add 1 dl grated cheese and chopped coriander to the slightly cooled minced meat filling.
  • Mix the eggs, cream of tartar and tomato salsa together. Pour the mixture into the flour mix and mix until smooth. Spread the filling on the pie crust and smooth the surface. Sprinkle the rest of the grated cheese over the top.
  • Bake the pie for about 30 minutes in the oven or until it is nicely browned.
  • Allow the pie to set slightly. Garnish the pie with fresh coriander and gluten-free tortilla chips. Serve the gluten-free texmex mince pie with a salad.
