A gluten-free savoury pie with salmon and feta fillings, sure to please everyone! This recipe was created for our new product gluten-free sorghum flour mix. Try the pie with different toppings too!

Ingredients

  • Bottom
  • 1,5dlVirtasalmen Viljatuote's gluten-free sorghum flour mix

  • 0,75 dl potato flakes

  • 1 tsp baking powder

  • 0,5 tl salt

  • 100 g butter

  • 1,75 dl cold water

  • Fillings
  • 175 g cold smoked salmon

  • 150 g feta

  • 2 egg

  • 1 dl cream

  • 2 dl grated cheese

  • 3 chopped spring onions

  • 0,5 dl chopped arugula

  • salt, red pepper and other spices to taste

Preparation

  • Bottom
  • Mix the dry ingredients together. Fold in the diced fat.
  • Finally, add the water a little at a time. Mix the dough until smooth. Put the dough in cling film and refrigerate it while you prepare the filling. The dough will stick to your hands and feel loose, but the potato flakes will swell nicely and the dough will firm up.
  • Cut a circle of baking paper into a baking dish (about 25 cm in diameter) and roll out the dough close to the edges. This will make it easier for you to lift the hot pie out of the pan. If you are not using baking paper, grease the pan before pressing the dough into the pan.
  • Pre-bake the base at 225°C for about 10-15 minutes before spreading the fillings.
  • Fillings
  • Mix the salmon and feta together in a bowl and sprinkle evenly over the pre-baked pie. In a separate bowl, mix the other ingredients and spoon evenly over the pie.
  • Bake the pie at 200 degrees for about 15-20 minutes until nicely browned on the top.

Tip

  • The base is suitable for many types of savoury pies such as ham, chicken, onion or vegetable.

      We only offer gluten-free milled products! So we don't sell ready-made baked goods, but offer the flour and recipes to make them yourself 🙂

  2. Hello! Is it possible to replace the potato flakes mentioned in the recipe with mashed potato powder?

      Potato flakes can be replaced with mashed potato powder. You only need a little less flour than the flakes 🙂
