kplGluten-free French crepes are like pancakes, but thinner, lighter and fried with a slightly different batter. Try it and love it!
Ingredients
3 eggs
7 dl gluten-free oat drink or other milk
1 tl vanilla sugar
1 tl sugar
0,5 tl salt
2 rkl rapeseed oil
For frying: oil or margarine
Preparation
- Beat the texture of the eggs in a bowl. Add the gluten-free oatmeal. In another bowl, mix the flour, salt and sugars. Slowly pour the egg milk into the flour mix, stirring all the time. Add the canola oil to the batter and mix. Let the dough rest in the refrigerator for 60min.
- Fry the crepes in a large pan over medium heat. Add a thin layer of oil to the pan, covering the entire surface of the pan. Use a silicone baking spatula to help. Mix the dough with a whisk. Pour about 0.5-1 dl of the batter into the pan, depending on the size of the pan. Swirl the pan immediately so that the batter spreads out in a thin layer over the entire pan. Flip the crepes once the surface has coagulated and the shine of the batter has disappeared. Store the finished crepes on a plate under foil.
- Serve with whipped cream, berries and fruit.
