Ingredients
- Dough
200 g butter or margarine, at room temperature
4,5 dl Virtasalmen Viljatuote's gluten-free sorghum flour mix
1 egg
2 tsp vanilla sugar
2 dl sugar
1,5 tl cinnamon

cinnamon sugar: 1 dl sugar about 1-2 tsp cinnamon
Preparation
- Combine the sorghum flour mix, vanilla sugar and cinnamon. Whisk the butter and dry ingredients until fluffy. In a separate bowl, gently whisk together the egg and sugar until the sugar is dissolved in the egg. Combine both until all ingredients are evenly mixed. The dough should be stiff, but still puffable. Transfer the dough to a piping bag with a star-shaped tip of about 10 mm. If you don't have a nozzle, you can cut a hole of about 1 cm in the corner of the plastic bag and extrude the "S" through it. Sprinkle cinnamon sugar over them. Bake on a baking tray lined with baking paper at 200°C for about 8 minutes or until the "S" biscuits have taken on a little colour around the edges.
Tip
- By crushing other letters, you can get alphabet biscuits. You can also make other biscuits from the same dough base and decorate them as you like.

You have to bake these. Is the baking temperature 180 and the convection oven less ?

Hi Erja,
The baking temperature for biscuits is 200 degrees. This has now also been added to the recipe! With a convection oven, the baking temperature is around 170-180 degrees.
No baking powder at all?
Hi Raija,
When we tested the recipe, we noticed that the ace pattern lines disappeared as the biscuits rose. For this reason we left out the baking powder 😊 However, you can add a small amount of baking powder to the dough if you wish. I recommend to try just a little bit of seasoning!
