1 dl sunflower seeds
1 dl Virtasalmi's Gluten-Free Grain Product Flaxseeds
0,5 dl pumpkin seeds
0,5 dl almond powder/or nut powder
2,75 dl hot water
2tspsalt
1tspbaking soda
100 g grated apple
1,5dlsoya drink (or buttermilk)
1 dl syrup
30 g yeast
Preparation
- Measure the seeds, almond meal and psyllium into a bowl. Pour over boiling water and allow to swell for 10 minutes.
- Mix the flour, salt and soda together in another bowl.
- Peel and grate the apple into a coarse grater.
- Put the soy milk or buttermilk, syrup and apple sauce in a saucepan and heat the mixture to hand temperature.
- Add the yeast and stir until the yeast is dissolved.
- Pour the buttermilk/soy mixture and the flour mix into the seeds.
- Mix the dough until smooth with your hands or with the dough hooks of an electric mixer, using the paddle attachment.
- Pour the dough into a greased rectangular (1l) loaf pan.
- Leave to rise, covered with a cloth, in a warm place for about 40 minutes.
- Bake in a 200 degree oven for about half an hour.
