Preparation

  • Measure the seeds, almond meal and psyllium into a bowl. Pour over boiling water and allow to swell for 10 minutes.
  • Mix the flour, salt and soda together in another bowl.
  • Peel and grate the apple into a coarse grater.
  • Put the soy milk or buttermilk, syrup and apple sauce in a saucepan and heat the mixture to hand temperature.
  • Add the yeast and stir until the yeast is dissolved.
  • Pour the buttermilk/soy mixture and the flour mix into the seeds.
  • Mix the dough until smooth with your hands or with the dough hooks of an electric mixer, using the paddle attachment.
  • Pour the dough into a greased rectangular (1l) loaf pan.
  • Leave to rise, covered with a cloth, in a warm place for about 40 minutes.
  • Bake in a 200 degree oven for about half an hour.
