Gluten-free Carrot Bread

A delicious Gluten Free Carrot Bread is definitely worth the effort. Prepare the dough the night before and bake in the morning. You'll have fresh bread right away for breakfast.

4 dl water (+42 C)
1 tsp dry yeast
1tspsalt
2 dl (2 small carrots) grated
1,5 dl Gluten-free Dark Wholemeal Rice Flour from Virtasalmi Cereal Product
Preparation
- Mix dry yeast, psyllium, salt and carrot grits into the water.
- Finally, add the flour.
- Stir well, but don't bother.
- Let rise for 12 h on the table at room temperature, cover the bowl with cling film.
- The next morning, quickly roll the dough into a ball and let it rise for another 30 minutes under a cloth.
- Put the pot with the lid in a cold oven and turn the oven on to 225 C, let it warm up for 30 min.
- Then put the bread in the pot and put the lid on.
- Bake for 30 min, then remove the lid and continue baking for 15 min.
- Gluten-free carrot pancake is ready to enjoy after a little cooling.
