minutesThe dairy-free gluten-free ham and mushroom pie is easily made from Virtasalmen Viljatuote' light, gluten-free flour mix.
Ingredients
- Bottom
100 g dairy-free margarine
0,5 tl salt
1 tsp baking powder
1,5 dl water
- Ham stuffing
2-2,5 onion and cucumber salad
200-300 g quality smoked ham
- Mushroom sample
8 dl fresh shiitake or mushrooms
1,5 dl jam onions
1 prk green olives
15 cherry tomatoes
- Frosting
2,5 dl coconut milk
3 eggs
a pinch of salt
0,5 tsp paprika powder
a pinch of black pepper powder
1 tsp basil
Preparation
- Fold in the dry ingredients and soft margarine.
- Add the water and mix until smooth.
- Press the dough into the base and around the edges of the pie tin.
- Spread cucumber salad on the bottom to add moisture.
- Add the ham strips or sliced mushrooms and vegetables.
- Mix the ingredients for the icing and pour over the toppings.
- Bake in a 200 °C oven for about 40 minutes.
- Serve the gluten-free ham and mushroom pie with a fresh salad.
Tip
- Cucumber salad can be substituted with pickles and onions.
- Instead of coconut milk, you can also use other plant-based milks or cream if they are suitable for your diet.
In what size of pan is the pie to be made ? It would make baking easier if you knew roughly the diameter/size of the base beforehand.

Thank you for your comment! This pie can be made in the following sizes: round diameter 26-30 cm or rectangle approx.22 x 33 cm. With pastries like this, the size of the pan is not very precise, so a rectangular pan doesn't have to be exactly that size 🙂
