Gluten Free Raspberry Layer Bread

Ingredients
200 g dairy-free margarine
1,5 dl sugar
1,5 dl Gluten-free corn flour from Virtasalmi Cereal Product
1,5 dl potato flour
1 large egg
Raspberry jam (for filling)
Tomato sugar (for garnish)
Preparation
- Whisk together the soft fat and sugar.
- Mix the flour thoroughly and add to the fat and sugar mixture.
- Stir in the egg.
- Crush the dough into cookies and bake them in a 175°C oven until very light brown, about 12 minutes.
- Allow to cool
- Spread raspberry jam on the bottom of the cookies and gently press another cookie to cover.
- Decorate by sprinkling powdered sugar on top.
