minutesGluten-free buckwheat and flaxseed rolls are packed with fibre and protein! These soft rolls are the perfect start to the day.
Ingredients
5 dl water
1 bag dry yeast
0,6 dl olive oil
1 rkl maple syrup
0,5-2 tsp salt
2,5 dl Gluten-free Fine Buckwheat Flour from Virtasalmi Cereals or Gluten-free Finnish Buckwheat Flour from Virtasalmi Cereals
2,5 dl buckwheat flakes
1-2 dl almond flour
2 tbsp sesame seeds
Preparation
- Heat the water in the microwave to 42 degrees (or what it says on the dry yeast bag). Stir the yeast into the water. Add olive oil, maple syrup and salt and stir. Stir in the psyllium. Add the buckwheat flakes and stir. Let stand for 5-10 minutes. Add the flour and mix with an electric mixer for 5 minutes.
- Spoon about 2-3 tablespoons of dough per bun onto a baking sheet lined with baking paper. Sprinkle sesame seeds on top. Let the buns rise for 20-30 minutes. Bake at 225°C for about 15 minutes.
- Gluten-free buckwheat and flaxseed rolls are at their best when fresh from the oven. If you prefer, you can also freeze the rolls fresh and reheat them to eat as needed.
