Gluten-free and vegan herb cheese rolls are the perfect snack for Christmas. Make sure you have plenty of delicious rolls for everyone, as they can quickly disappear into better mouths.

Ingredients

  • Dough
  • 5 dl (325 g) Viljatuote Gluten Free Bun Flour Mix

  • 1 pss (11 g) dry yeast

  • 1tspsalt

  • 1 tsp sugar

  • 3 dl gluten-free plant-based drink e.g. oat drink

  • 80 g melted margarine

  • + more margarine to grease the pan

  • Stuffing
  • 100 g vegan cream cheese (check that it is gluten-free)

  • 100 g vegan grated cheese

  • 2 tbsp fresh chopped rosemary

  • 2 tsp dried thyme

  • 1 tsp dried basil

  • 1 tsp Dijon mustard

  • ground black pepper

  • + plant-based drink to lubricate the rolls

Preparation

  • Mix the dry yeast with a small amount of Virtasalmen Viljatuote Gluten-free bun flour mix. Mix the remaining flour and salt together. Heat the oatmeal to 42°C and stir in the sugar and the bun flour mix with the dry yeast.
  • Leave to infuse for about a couple of minutes.
  • Start with the rest of the flour and finish with the melted butter. Using a whisk with dough hooks or an electric mixer, mix the dough for a couple of minutes until it comes away easily from the sides of the bowl.
  • Cover the bowl and let the dough rise for 30 minutes in a warm place.
  • Prepare the filling by whisking the cream cheese. Add the grated cheese, herbs, Dijon and black pepper and mix with a ladle until smooth.
  • Preheat the oven to 225°C and grease the cavities of the cake tin with margarine.
  • On a floured surface, roll out the dough into a disk about 35 x 45 cm. Place small dollops of filling evenly on the plate and spread out slightly, taking care not to break the dough. Roll out the sheet of dough and cut 12 small rolls.
  • Place the small rolls in a cupcake tin and brush with oatmeal. Bake for about 10-12 minutes or until the rolls are slightly golden.
  • Allow the rolls to cool slightly before serving, as the filling may be runny at first. It will set as it cools.
  • Serve gluten-free and vegan herb cheese rolls with salad dressing.
