minutesGluten-free and vegan apple cupcakes are perfect to enjoy with tea on autumn evenings, or even during the day. The ready-made cupcakes keep well in the fridge if you don't eat them first.
Ingredients
2 dl gluten-free plant-based drink
2 tsp apple cider vinegar
n. 0,75 dl Virtasalmi Grain Product Fine Rice Flour
n. 2 dl brown sugar
3 tsp cinnamon
1.5 tsp baking powder
0,5 tl salt
n. 0,5 dl baked apple jam or applesauce
1 dl rapeseed oil or melted virgin coconut oil
- Kuorrute
100 g dairy-free margarine
150 g icing sugar
1 tsp vanilla sugar or ½ tsp real vanilla
1 tsp cinnamon
- Cupcake filling
n. 1,5 dl baked apple jam or applesauce
Preparation
- Preheat the oven to 180 degrees. Prepare a cupcake tin with paper liners (an American cupcake tin is fine).
- Mix together the plant-based drink and apple cider vinegar.
- In a bowl, mix together the cereal flour, sugar, cinnamon, baking powder and salt.
- Add the apple jam, oil and the drink vinegar mixture. Knead the dough together, but don't overmix the dough.
- Spoon the dough into the cupcake tins. The pans should be almost full.
- Bake for 20-25 min or until the cupcake feels firm. Allow to cool thoroughly.
- Use a whisk to mix the ingredients for the icing.
- To fill the cupcakes, make a hole in the middle and spoon in the jam. Pipe the frosting on top.
- Gluten-free and vegan apple cupcakes are ready to enjoy.
- Store cupcakes in the fridge.
