minutesThis gluten-free apple and carrot cake combines the autumn harvest from both the tree and the vegetable garden into a luscious cake. In addition to great taste, this cake also has a nice mouthfeel. Enjoy together or alone with a cup of tea.
Ingredients
- Cake
400 g total apples and carrots if you wish (I used 300 g apples and 100 g carrots)
3 eggs
3 dl sugar
1,5 dl oil
3,5 dl Virtasalmi Cereal Product Coarse Gluten Free Flour Mix
1tspbaking soda
1 tsp baking powder
1-2 tsp cinnamon
1tspcardamom
1 dl pecans
- Stuffing
100 g margarine or butter
400 g unflavoured cream cheese
3,5 dl icing sugar
1 tl vanilla sugar
1-2 tbsp lemon juice
Preparation
- Cake
- Peel and grate the apples (and carrots) into a fine grater.
- Mix the eggs and sugar together until fluffy. Add the oil and the apple-carrot mixture to the egg-sugar foam.
- Mix the dry ingredients together and add to the dough. Finally, mix in the chopped nuts.
- Pour the dough into a greased cake tin (I used 20cm). Bake at 175 C for about 45-50 minutes. Allow the cake to cool slightly before removing it from the pan.
- Stuffing
- Cut the cooled cake in half. Melt the fat for the frosting and mix in the other ingredients. Spread the icing between and on top of the cake. Gluten-free apple and carrot cake is ready to enjoy.
