Gluten-free Tomato and Goat Cheese Pie

Ingredients

  • Bottom
  • 125 g milk dough

  • 125 g melted margarine/butter

  • 2 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix

  • 0,5dlVirtasalmen Viljatuote's gluten-free oat flakes

  • 1 tsp baking powder

  • a pinch of sea salt

  • Stuffing
  • 375 g tomato paste

  • 50 g chopped spinach

  • 1 medium onion, chopped

  • 2 cloves of garlic

  • a pinch of pepper

  • 0,25 tsp salt

  • a pinch of brown sugar

  • Surface of
  • 1 pkt goat's cheese

  • small box of mini tomatoes

  • some sea salt, pepper and herbs (basil, oregano, etc.)

  • 1 pss grated cheese, I used Emmental

Preparation

  • Bottom
  • Mix the milk cream and margarine together.
  • Add the flour and oat flakes to the mixture, with the baking powder and salt.
  • Press the dough into the greased pie dish.
  • Stuffing
  • Pour the tomato paste into a saucepan, add the spinach, onion and squeeze in the garlic cloves.
  • Bring to the boil over low heat for 5 min.
  • Taste. Cook the tomato sauce for a couple more minutes.Pour the finished tomato sauce over the base.
  • Surface of
  • Slice the goat's cheese into chunks, and cut the mini tomatoes in half.
  • Place the tomatoes and goat's cheese on top of the pie.
  • Sprinkle with a little salt, pepper and herbs.
  • Spread the grated cheese on top. Bake at 200 °C for about 20 min.
