Gluten-free Tomato and Goat Cheese Pie

125 g milk dough
125 g melted margarine/butter
2 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
0,5dlVirtasalmen Viljatuote's gluten-free oat flakes
1 tsp baking powder
a pinch of sea salt
- Stuffing
375 g tomato paste
50 g chopped spinach
1 medium onion, chopped
2 cloves of garlic
a pinch of pepper
0,25 tsp salt
a pinch of brown sugar
- Surface of
1 pkt goat's cheese
small box of mini tomatoes
some sea salt, pepper and herbs (basil, oregano, etc.)
1 pss grated cheese, I used Emmental

Preparation
- Bottom
- Mix the milk cream and margarine together.
- Add the flour and oat flakes to the mixture, with the baking powder and salt.
- Press the dough into the greased pie dish.
- Stuffing
- Pour the tomato paste into a saucepan, add the spinach, onion and squeeze in the garlic cloves.
- Bring to the boil over low heat for 5 min.
- Taste. Cook the tomato sauce for a couple more minutes.Pour the finished tomato sauce over the base.
- Surface of
- Slice the goat's cheese into chunks, and cut the mini tomatoes in half.
- Place the tomatoes and goat's cheese on top of the pie.
- Sprinkle with a little salt, pepper and herbs.
- Spread the grated cheese on top. Bake at 200 °C for about 20 min.
