minutesGluten-free carrot and oatmeal bread is easy to make and full of flavour! Round up a fresh loaf for the weekend!
Ingredients
4 dl water
1,5 bag dry yeast
2 tbsp light syrup
1tspsalt
2 carrots
4 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
2 dl Virtasalmi's Viljatuote Gluten Free Big Whole Grain Oatmeal
0,5 dl rapeseed oil
Preparation
- Grate the carrots. In a bowl, mix the flour, oatmeal and dry yeast. Add the warm water and syrup to the bowl. Mix in the carrot grits and oil. The dough is thick, so it may be easiest to mix by hand at this stage.
- Pour the dough onto a small baking tray (the loaf in the picture is made on a 25×35 cm baking tray) lined with baking paper. Using wet hands, press the dough into a thin sheet on the baking tray. Cut a square into the bread so that the blade of a knife hits the bottom. You can sprinkle the surface with oatmeal or seeds, for example. Let the loaf rise under a cloth for at least 30 minutes. Preheat the oven to 225C. Bake in the middle of the oven for about 15 minutes or until the surface has a nice colour.
- Gluten-free carrot and oatmeal bread tastes best fresh. If you prefer, you can reheat the bread slightly in the microwave if it was made the day before.

Should be made completely grain-free. Can seeds be used instead of oatmeal or can flour be substituted?
The oat flakes contribute not only to the gentle taste of the bread but also to its texture. You can, of course, try replacing the flakes with a slightly larger amount of flour, for example. Using seeds can make the bread crunchy.
