Gluten-free soft rhubarb pie goes well with vanilla ice cream or sauce. The Virtasalmen Viljatuote's broad bean flour mix adds a lovely softness and crunch to the pie crust.

Preparation

  • Bottom
  • Melt the butter and allow to cool.
  • Mix the sugar, cream, egg and dry ingredients into the cooled butter until blended.
  • Spread the dough into a round, greased pie dish.
  • Stuffing
  • Pour the rhubarb pieces over the base and sprinkle with farina sugar.
  • Pre-bake at 200°C (baking oven) for about 15 minutes.

  • During pre-cooking, mix the egg, cream and sugar.
  • Pour the mixture over the pie 15 minutes after baking.
  • Place in the oven for another 25 minutes.
