minutesGluten-free English Fruit Cake is made from Virtasalmen Viljatuote' malted bean and mash. The fruity dry cake is suitable for serving with coffee or as a warm snack.
Ingredients
200 g butter
1 dl sugar
1 dl brown sugar
3 eggs
1,5 dl Gluten-free Finnish Fine Buckwheat Flour from Virtasalmi Cereal Products
1 dl Virtasalmen Viljatuote Gluten-free bulgur bean flour mixture
2tspbaking powder
2 tsp vanilla sugar
1 dl coconut flakes
100 g candied candied candied lemon peel
100 g coctail cherries in pieces
50 g candied orange peel
0,5 dl dark rum
Preparation
- Put the dry fruit in the rum to juice (orange juice is also fine).
- Mix flour, baking powder, vanilla sugar and coconut flakes.
- Cream the soft butter and sugar and add the eggs one at a time.
- In between adding the eggs, add a spoonful of flour mix to prevent the dough from curdling.
- Add the rest of the flour mix, the dry fruit and the rum.
- Mix the dough until smooth and pour into the cake tin.
- Bake the cake in the oven at 175°C for about 50 minutes.
- Gluten-free English fruitcake gets better if you can keep it in the fridge for a few days before serving.
- Also suitable for freezing.
