Gluten-free English Fruit Cake is made from Virtasalmen Viljatuote' malted bean and mash. The fruity dry cake is suitable for serving with coffee or as a warm snack.



  • Put the dry fruit in the rum to juice (orange juice is also fine).
  • Mix flour, baking powder, vanilla sugar and coconut flakes.
  • Cream the soft butter and sugar and add the eggs one at a time.
  • In between adding the eggs, add a spoonful of flour mix to prevent the dough from curdling.
  • Add the rest of the flour mix, the dry fruit and the rum.
  • Mix the dough until smooth and pour into the cake tin.
  • Bake the cake in the oven at 175°C for about 50 minutes.
  • Gluten-free English fruitcake gets better if you can keep it in the fridge for a few days before serving.
  • Also suitable for freezing.
