Asparagus season is one of the highlights of spring and what better way to celebrate than with a gluten-free asparagus pie. This recipe is easy, tasty and made with Virtasalmen Viljatuotes' Gluten-free all-purpose flour mix.

Ingredients

  • Bottom
  • 100 g butter

  • 2,25 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix

  • 0,25 tsp salt

  • 4 tbsp cold water

  • Stuffing
  • 1 bunch of green asparagus

  • 4 sun-dried tomato

  • 2-3 spring onions + a dab of butter or oil

  • 3 eggs

  • 150 g French cream

  • 1 dl whipping cream

  • 1 dl Parmesan grated cheese

  • a pinch of salt and pepper

Preparation

  • Chop the butter into small cubes.
  • Add the flour and salt to the bowl.
  • Crumple everything up to a crumb.
  • Add the water and mix into a dough.
  • Grease the pie crust and press the dough onto the bottom and slightly around the edges.
  • Mash with a fork and put the casserole in the fridge while you prepare the filling.
  • Snap off the woody part of the asparagus.
  • Cut some of the asparagus to be used as a garnish into casserole-sized pieces. Chop the remaining asparagus into pieces.
  • Stuffing
  • Mix the eggs, cream, cream of tartar and parmesan.
  • Add salt and pepper, mix well
  • Cut the spring onions into small rings and fry them for a while in butter or oil over a low heat.
  • Cut the sun-dried tomatoes into small pieces. Put them, the asparagus pieces and the spring onion in the baking dish on top of the dough.
  • Pour the liquid filling over the top and press the long asparagus nicely into the pie.
  • Bake at 200 degrees for 30-40 min.
  • Gluten-free asparagus pie is at its best when fresh and slightly chilled.
