minutesAsparagus season is one of the highlights of spring and what better way to celebrate than with a gluten-free asparagus pie. This recipe is easy, tasty and made with Virtasalmen Viljatuotes' Gluten-free all-purpose flour mix.
Ingredients
- Bottom
100 g butter
2,25 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
0,25 tsp salt
4 tbsp cold water
- Stuffing
1 bunch of green asparagus
4 sun-dried tomato
2-3 spring onions + a dab of butter or oil
3 eggs
150 g French cream
1 dl whipping cream
1 dl Parmesan grated cheese
a pinch of salt and pepper
Preparation
- Chop the butter into small cubes.
- Add the flour and salt to the bowl.
- Crumple everything up to a crumb.
- Add the water and mix into a dough.
- Grease the pie crust and press the dough onto the bottom and slightly around the edges.
- Mash with a fork and put the casserole in the fridge while you prepare the filling.
- Snap off the woody part of the asparagus.
- Cut some of the asparagus to be used as a garnish into casserole-sized pieces. Chop the remaining asparagus into pieces.
- Stuffing
- Mix the eggs, cream, cream of tartar and parmesan.
- Add salt and pepper, mix well
- Cut the spring onions into small rings and fry them for a while in butter or oil over a low heat.
- Cut the sun-dried tomatoes into small pieces. Put them, the asparagus pieces and the spring onion in the baking dish on top of the dough.
- Pour the liquid filling over the top and press the long asparagus nicely into the pie.
- Bake at 200 degrees for 30-40 min.
- Gluten-free asparagus pie is at its best when fresh and slightly chilled.
