Ingredients
2,5 tbsp gluten-free oat drink
100 g dairy-free margarine
1 dl sugar
1 dl brown sugar
2,5 dl (175 grams) Viljatuote Light Gluten Free Flour Mix
1 dl almond flour
1 tsp baking powder
0,5tspbaking soda
0,25 tsp salt
150 g chocolate chips
Preparation
- Preheat the oven to 200°C. Grease a cast iron pan.
- Mix the milled flaxseeds and oat drink together. Whisk in the softened butter and sugars. Stir in the flaxseed "egg". Mix together the flour, baking powder, baking soda and salt. Combine the dry ingredients into the butter-sugar mixture. Finally, stir in the chocolate chips.
- Spread the dough on a pan and bake in the (lower) middle of the oven for about 25 minutes or until the biscuit feels cooked. The biscuit will also set in the pan after baking and will become crispy.
- Serve the gluten-free and vegan pancake with ice cream or whipped cream.
