Gluten-free Christmas cupcakes are the Christmas table atmosphere makers! You can also decorate the muffins with gingerbread and Christmas flavours in other ways if you like!

Ingredients

  • 150 g baking margarine

  • 2 dl sugar

  • 2 eggs

  • 0,5 dl water

  • 2,5 dl Virtasalmi Cereal Products Dark Gluten Free Flour Puree

  • 2 tbsp cocoa powder

  • 2 tsp vanilla sugar

  • 2tspbaking powder

  • 1 tsp cinnamon

  • 1tspcardamom

  • 1 mm ground cloves

  • 1 mm Pomeranian shell

  • n. 50 g dark chocolate

  • Kuorrute
  • 50 g margarine

  • 100 g cream cheese

  • 6 dl icing sugar

  • 2,5tspgingerbread spice mix

  • green paste colour

  • gluten-free strudel

Preparation

  • Whip the butter and sugar until fluffy.
  • Add the eggs and cold water.
  • Mix the dry ingredients together and incorporate into the mixture. Finally, toss in the chocolate chips.
  • Pour the batter into the muffin tins.
  • Bake at 200 degrees for 15 minutes.

  • Using a food processor or hand mixer, blend the cream cheese, almost melted margarine and paste colouring until smooth (add the paste colouring with a toothpick). Add the icing sugar a tablespoon at a time, mixing well. You can cover the bowl with a kitchen towel, for example, while mixing. The mixture will be quite hard and heavy and should not remain runny. Add more green colour if necessary.
  • Allow the muffins to cool completely before frosting. Place the piping bag in a deep vase or glass and turn the edges outside the glass. Scoop the frosting into the bag and close the filled bag tightly, for example with a bag sealer. Frost the muffins and decorate to look like a Christmas tree.
  • Store in the fridge and warm up before serving to soften the gluten-free Christmas cupcakes.

  1. I made this frosting a couple of years ago and all I remember is that it tasted good. Now I'm thinking of applying the frosting to other muffins, and I can't remember how many muffins I have enough for?

      The amount of frosting you need depends on how thick you want the frosting to be. 🙂
      I seem to remember that the frosting is enough for about 10-20 cupcakes. The best way to find out is to experiment. 😉

      Sorry for the delay in replying! It should be fine in a smaller cake pan, on a lower heat and with a longer baking time.
