6 dl Virtasalmen Cereal Products Gluten-Free Broad Bean Flour (leave some for grinding breadcrumbs)
Preparation
- Put a bowl of 42°C water in a bowl.
- Add the dry yeast mixed with a small amount of flour and mix.
- Add the salt, the rest of the flour and knead the dough carefully.
- The best way to do this is with a universal machine.
- Let the dough rest for a moment.
- Grease and flour the bread pan.
- Tip the dough into the pan and smooth the surface. Cover with a baking sheet.
- Let rise in a warm, draft-free place for 45-60 minutes. Bake at 220°C for 40-45 minutes.
- Turn the bread out onto a wire rack and wrap in a clean baking sheet.
Bread made from bull bean flour had been on my mind for a long time. Here's an easy recipe. The bread rose beautifully in the pan and now in the oven. The heat is pretty high at 40-45 minutes, so I covered the bread at 15 minutes and lowered the heat. My oven is efficient.
After 35 minutes in a Teflon oven at 200 degrees, my bread was already fully cooked. A beautiful light, fine-grained centre. Crispy crust.
I don't suppose you can find bull bean powder on the shelves these days?

Bull bean flour has indeed been discontinued and individual packets can still be found in some shops.
