minutesDelicious gluten-free lingonberry oat biscuits are made from Virtasalmen Viljatuote' Gluten-free oat flour mix. The dough makes about 30 large or 50 small biscuits.
Ingredients
200 g butter
n. 2,5 dl sugar
2 eggs
1 tsp cinnamon
1 tsp baking powder
1dlfrozen lingonberries
Preparation
- Cream the soft butter and sugar.
- Beat in the eggs.
- Mix the combined dry ingredients into the mixture.
- Roll the dough into a bar and divide into 50 pieces.
- First roll the pieces between your palms into balls and press the balls flat.
- Put them on a baking sheet, leaving room for spreading.
- Press some frozen lingonberries on top.
- Bake at 200 degrees for about 12 minutes, until the cookies are light brown.
- Allow to cool well and store the gluten-free lingonberry-oatmeal biscuits in a jar with a lid
Could I add half the amount of flour to the oatmeal? Or what would be the ratio? The flakes would have a slightly more crumbly texture.
Hi Terhi,
The oat flour mix used in this recipe contains oat flakes and oat liquor, so you get a crunchy texture just like the recipe says! However, if you want even more roughness, you can substitute a few tablespoons of flour with flakes. We haven't tested the exact ratio, so let the dough rest for a few minutes before adding more flour 😊
