  • Measure psyllium into yogurt to swell.
  • Whisk the eggs and sugar, add the yoghurt, margarine and dry ingredients mixed together and finally the berries.
  • Divide into sturdy muffin tins and bake in a 200°C oven for 15-20 minutes.
  • Gluten-free berry muffins are best when slightly chilled.
