Gluten-free pancakes are easy to make with this recipe. Both savoury and sweet fillings are delicious with the pancakes. Gluten-free pancake mix is available at Prismoista and S-Markete stores all over Finland.
Ingredients
5 dl milk or water
2 eggs
0,5-1 tl salt
Butter or oil for frying.
- Serve savoury
with smoked pancake filling
minced meat
with vegetables
with different cheeses
- Serve sweet
with jam and whipped cream
with quince sauce
with hazelnut spread
marijuana
Preparation
- Beat the texture of the egg in a bowl to break it up.
- Add the milk or water, flour and salt, whisking to combine.
- Allow to swell for about 10 minutes.
- Always mix the dough before adding a new batch, as the flour will sink to the bottom of the bowl.
- Fry small pancakes in a thin frying pan or large pancakes in a frying pan.
- Gluten-free pancakes taste as savoury as they do sweet.

- Since gluten-free flour sinks to the bottom with water/milk alone, you can get a smooth lettuce dough by replacing some of the liquid with yoghurt/cream, for example in the following ratio:
3 dl water/milk
2dl unflavoured yoghurt or cream
The yoghurt/cream binds the flour and prevents the lettuce dough from separating. In this case you can add a little sugar to balance the acidity of the yoghurt/cream and you can adjust the thickness by adding liquid if necessary. Even if the batter seems thick, it spreads well in the pan and the batter does not separate while the previous braids are cooking in the pan. 🙂 - Halla Onerva
