Ingredients
1,5 dl maple syrup
1 dl coconut sugar
3 eggs
1 dl peanut butter
2tspvanilla extract
2,5 dl pumpkin puree
2,5 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
2tspbaking powder
0,5tspbaking soda
a pinch of salt
2 tl pumpkin spice
1,5 tl cinnamon
0,5 tsp cardamom
1dlalmond drink
100 g dark chocolate chips
Preparation
- Mix together the maple syrup, coconut sugar, eggs, peanut butter and vanilla extract. Add the pumpkin puree and stir. In another bowl, combine the flour, baking powder, baking soda and spices. Add half of the flour and almond milk to the dough and mix. Add the remaining flour and milk and mix. Stir in the chocolate chips.
- Spoon into muffin tins (about 3/4 full). Bake at 180°C for about 15 minutes. You can use a toothpick to test for doneness.
- Gluten-free pumpkin chocolate muffins are ready to eat.
