minutesGluten-free and vegan berry pie is the perfect way to clear out the freezer! Use whatever berries you have in your freezer!
Ingredients
- Pie crust
1,5 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
0,5 dl sugar
2 tsp tsp vanilla sugar
0,5 tsp ground cardamom
100 g virgin coconut oil
1 tsp - 1 tbsp water
- Berry fruit sample
3 dl dairy-free "curd" e.g. Alpro go / Greek style
1 dl sugar
1 tsp tlvanilla sugar
6 dl frozen berries e.g. blueberries, raspberries, strawberries
Preparation
- Preheat the oven to 200°C and grease the pie dish.
- Mix the dry ingredients. Fold in the coconut oil. Add water 1 tsp at a time to make a firm dough.
- Press the dough into the bottom of the greased pan and preheat the bottom for 10 minutes.
- In the meantime, mix the dairy-free "curd", sugar and vanilla sugar.
- Pour the "curd" onto the pre-cut base and sprinkle the berries on top.
- Bake in the oven for 25 minutes and let the pie cool well. The filling will set in the fridge.

Tip
- Store the gluten-free and vegan berry pie in the fridge, well covered. The pie crust will set in the cold, so take the pie out about 30 minutes before serving.
