minutesGluten-free brita mud cake is a wonderful summer treat! The sweetness of the meringue and the softness of the white mud cake is an irresistible combo!
Ingredients
- Mud pie
2 dl sugar
3,5 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
225 g butter
A pinch of salt
4 eggs
- Mareng
2 egg white
1 dl sugar
- Top cover
2 dl whipped cream

Preparation
- Prepare the cake base. Melt the butter and set it aside. In a bowl, mix all the ingredients together and finally add the butter. Pour the batter into a greased cake tin (I used a 23cm tin).
- Prepare the meringue. Separate the egg whites. Whip the egg whites into a stiff froth. Add the sugar in small batches, stirring all the time. Spread the meringue over the cake base. Bake in a medium oven at 175C for about 25-30min. Cover the cake with foil if the meringue darkens too much.
- Whip the cream until frothy. Pour the cream over the cooled cake. Decorate with berries. Enjoy the gluten-free light brita mud cake in good company.

is this missing the main ingredient of a mud cake, chocolate? A mud cake is "a chocolate cake that is left moist inside when baked".

Mud cake is often made with chocolate. Mud cake can also be made as a light version without chocolate. The name mud cake reflects the fact that the cake remains moist inside.
