A luscious gluten-free date cake is easy to make. Allow it to rest in the fridge for a few days. This recipe will do the trick!

Ingredients

Preparation

  • Boil the water, sugar and date into a puree over low heat for about 30 minutes.
  • Add the butter to the warm puree.
  • When the butter has melted, whisk in the eggs one by one.
  • Mix the baking soda, baking powder and psyllium into the flour and add the flour mix to the dough, beating gently.
  • Pour the dough into a greased and floured (e.g. Virtasalmen Viljatuote's Gluten Free wholegrain brown rice flour or Almond Flour) cake tin.
  • Bake at 175 degrees for about 1 hour.

Tip

  • Gluten-free date cake is at its best after a few days in the fridge.
