Ingredients
- Super Bread
Dry ingredients:
1 dl (60g) sunflower seeds
1 dl (40g) Gluten Free Oatmeal from Virtasalmi Cereal Product
2 dl (60g) pumpkin seeds
1,5 tsp salt
Wet:
1 dl (60g) Virtasalmi Cereal Product Gluten Free Flaxseed
4 tbsp virgin coconut oil
1 tbsp honey
6 dl hot water
- Manteliricotta
100 g peeled almonds
3 tbsp nutritional yeast flakes
1 tbsp lemon juice
0,25 tsp salt
0,25 tsp onion powder

Preparation
- Super Bread
- Mix the dry ingredients together really well.
- Heat the water and add the coconut oil, honey and flaxseeds. Allow to rest for a while.
- Add to the dry ingredients and mix really well. The best way is to squeeze the mixture by hand to make sure all the dry ingredients are mixed in the water.
- Cut pieces of baking paper to fit the baking dish. Press the dough into the loaf pan, cover and leave to rise for 2-10 hours.
- Bake in a 175 c oven for about 40 min, then very carefully remove the bread from the oven with a baking paper (be careful not to burn your hands!) and continue baking the bread without the baking pan for about 35 min. Allow to cool completely before cutting.
- Manteliricotta
- Soak the almonds overnight. Drain and rinse. Put all the ingredients in a food processor and add water a tablespoon at a time to get the desired consistency (about 3-4 tbsp).
- Gluten-free super bread and almond ricotta are ready to enjoy!
