125 g butter/margarine
125 g gluten-free dark chocolate
2 eggs
2 dl sugar
1,5 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
1 tl baking powder
1 rkl cocoa powder e.g. Van Houten
1 dl almond paste

1 rs orange cottage cheese
0,5 dl icing sugar

1 tlk apricot halves in sugar syrup

Preparation
- Melt the fat and crumble the chocolate into the fat.
- Stir until the chocolate has melted.
- Beat the eggs and sugar until foamy.
- Mix the flour, baking powder and cocoa powder.
- Stir the fat chocolate mixture into the egg whites.
- Add the flour mix to the dough through a sieve and stir in the almond meal.
- Spread the dough in a floured loose pan and bake in a 175°C oven for about 20 minutes.
- The cake should remain doughy inside and flatten out when cooled.
- Let the cake cool in the pan before transferring it to a flat plate.
- Chill the cake until cold.

- Whip the cold cream into a loose froth.
- Mix in the cream cheese and powdered sugar.
- Spread the mixture on the cold cake.
- Decorate the cake with drained apricot halves, grapes and lemon balm leaves.
