Ingredients

  • 125 g butter/margarine

  • 125 g gluten-free dark chocolate

  • 2 eggs

  • 2 dl sugar

  • 1,5 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix

  • 1 tl baking powder

  • 1 rkl cocoa powder e.g. Van Houten

  • 1 dl almond paste

  • Accessed on
  • 1 tlk whipped cream

  • 1 rs orange cottage cheese

  • 0,5 dl icing sugar

  • For decoration
  • 1 tlk apricot halves in sugar syrup

  • grapes

  • lemon balm leaves

Preparation

  • Melt the fat and crumble the chocolate into the fat.
  • Stir until the chocolate has melted.
  • Beat the eggs and sugar until foamy.
  • Mix the flour, baking powder and cocoa powder.
  • Stir the fat chocolate mixture into the egg whites.
  • Add the flour mix to the dough through a sieve and stir in the almond meal.
  • Spread the dough in a floured loose pan and bake in a 175°C oven for about 20 minutes.
  • The cake should remain doughy inside and flatten out when cooled.
  • Let the cake cool in the pan before transferring it to a flat plate.
  • Chill the cake until cold.

  • Whip the cold cream into a loose froth.
  • Mix in the cream cheese and powdered sugar.
  • Spread the mixture on the cold cake.
  • Decorate the cake with drained apricot halves, grapes and lemon balm leaves.
