Gluten Free Velvet Pie with Lime

150 g margarine
1 dl sugar
1 egg
3,5 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
1 tsp baking powder
1 tl vanilla sugar
- Stuffing
1 dl lime curdia'
250 g (1 pk) yoghurt cream
200 g (1 pk) sour cream
1 dl whipping cream
1 egg
0,75 dl sugar
2 tsp tsp vanilla sugar
0,5tsplemon juice
Preparation
- Bottom
- Whisk together the soft margarine and sugar.
- Stir the egg into the foam.
- Mix the dry ingredients together and add to the dough.
- Mix into a smooth dough.
- Press the dough into the bottom and sides of the greased pie dish.
- Stuffing
- Spread the jam over the base. If the jam is very thick, heat it in the microwave for a minute on defrosting power to make it easier to spread.
- Mix the filling ingredients together and spread on top of the pie.
- Bake in the oven at 175°C for about 50 minutes until the filling has set.
