Easy gluten-free small strawberry cake is made with gluten-free teff flour from Virtasalmen Viljatuote. Filled with rhubarb puree and whipped cream. Oh my, what a great summer treat this will be.

Ingredients

Preparation

  • Whisk the sugar and eggs until frothy.
  • Mix the dry ingredients together and add to the foam, stirring gently.
  • Bake the base in a loose pan at 180 degrees for about 20 minutes.
  • Stuffing
  • Boil the rhubarb and sugar until pureed.
  • Moisten the base before adding the fillings, e.g. with milk.
  • Spoon the rhubarb-sugar mixture over the cooled base.
  • Whip the cream and add the cream cheese and vanilla sugar.
  • Spread the cream over the mixture.
  • Garnish with strawberries and mint leaves.
  • Gluten-free small strawberry cake is ideal for a small sweet tooth or a small party.
