minutesEasy gluten-free small strawberry cake is made with gluten-free teff flour from Virtasalmen Viljatuote. Filled with rhubarb puree and whipped cream. Oh my, what a great summer treat this will be.
Ingredients
2 eggs
1 dl sugar
0,75dlVirtasalmen Viljatuote's gluten-free dark wholegrain teff flour
1 tsp baking powder
1 tl vanilla sugar
- Stuffing
1 dl whipping cream
100 g vanilla cream cheese
1 tl vanilla sugar
- Sose
250 g rhubarb
1 dl sugar
Preparation
- Whisk the sugar and eggs until frothy.
- Mix the dry ingredients together and add to the foam, stirring gently.
- Bake the base in a loose pan at 180 degrees for about 20 minutes.
- Stuffing
- Boil the rhubarb and sugar until pureed.
- Moisten the base before adding the fillings, e.g. with milk.
- Spoon the rhubarb-sugar mixture over the cooled base.
- Whip the cream and add the cream cheese and vanilla sugar.
- Spread the cream over the mixture.
- Garnish with strawberries and mint leaves.
- Gluten-free small strawberry cake is ideal for a small sweet tooth or a small party.
