5 eggs (room temperature)
2 dl sugar
2 dl rapeseed oil
2,5 dl mandarin juice
3 grated mandarin peel
1 tsp vanilla flavouring
2tspbaking powder
0,5 tl salt

Preparation
- Separate the yolks and whites into their own bowls.
- Beat the whites to break up the texture and add the sugar in batches while mixing with an electric mixer. Mix until a stiff foam forms (about 10 minutes), leaving peaks in the foam.
- Continue mixing and add the egg yolks, rapeseed oil, grated mandarin peel, salt, vanilla extract and mandarin juice.
- Mix the baking powder into the flour mix and add to the dough. Mix just until the flour is incorporated into the dough.
- Pour the cake batter into a greased and baking paper-lined cake tin of about ⌀26 cm.
- Bake at 160°C on the second lower level of the oven for about 45 minutes, until the cake is cooked.
- Drop the cake tin 1-2 times immediately after removing it from the oven, from a height of about 20 cm.
- Allow the cake to cool properly. Drizzle with icing sugar and garnish with mandarin slices.
