minutesGluten-free Christmas logs are a traditional treat on the Christmas table. This juicy Christmas treat combines fresh orange, delicious vanilla and dark cocoa.
Ingredients
- Bottom
4 eggs
1,5 dl sugar
1,5 dl Gluten-free corn flour from Virtasalmi Cereal Product
3 tbsp dark cocoa

150 g mango jam or other jam of your choice
- Stuffing
1 prk (200 g) orange zest
1,5 dl whipped cream
2tspreal vanilla sugar
1 grated orange rind
2 tbsp vanilla custard powder (millet)
75 g canned cherries

2,5 dl whipped cream
3 tbsp vanilla custard powder (millet)
1 tbsp dark cocoa powder
Preparation
- Bottom
- Whisk the eggs and sugar into a fluffy froth.
- Add the flour and cocoa and stir gently with an arrow.
- Bake at 225'c for about 7 min.
- Cool the base, then tip the base onto a clean baking sheet and prepare the filling.

- Spread over the cooled base.
- Stuffing
- Whip the cream, orange zest, vanilla sugar and vanilla custard powder.
- Wash the orange really well and grate the peel.
- Finely chop the canned cherries and add the orange with the grated orange to the filling.
- Spread the filling over the jam, but leave about 5 cm of one long side without filling (otherwise it will overflow when rolled).

- Mix everything together.
- Cut two pieces of the roll into twigs and place the twigs where you want them.
- Spread the whipped cream over the top and decorate as you wish.
Tip
- The gluten-free Christmas breakfast is ready to eat straight away but is at its most delicious the next day.
