Gluten free Focaccia bread

The Italian flatbread, focaccia originated in the Ligurian region and has ancestry dating back to ancient Rome. It gets its juicy flavour from olive oil and finger salt. You can also sprinkle the surface with herbs, tomatoes, olives and other colourful vegetables. The traditional focaccia is square or rectangular. Focaccia is usually eaten as a side dish for starters and main courses and, when cut in half, makes wonderful stuffed sandwiches.
Ingredients, approx. 19x 26 cm baking dish
4 dl water
2 tsp (6-7 g) dry yeast
2tspsalt
2 tsp sugar
2 tsp virgin olive oil
n. 5-6 dl Gluten Free Pizza & Street Food Mix from Virtasalmi Grain Products
Preparation
- Add the dry yeast to the lukewarm water and mix well. Add the sugar, salt and oil and mix. Add about half of the flour and the psyllium will start to work and the dough will thicken. Add the rest of the flour and knead until smooth.
- Transfer the dough to a baking dish greased with olive oil, approx. 19 x 26 cm. Spread into an even mass. Cover with cling film and baking paper. Let rise for 1-2 hours. Gently press small bumps into the dough with your fingertips. Drizzle with plenty of olive oil (about 0,5 dl) and add finger salt to taste. Sprinkle with herbs, tomatoes, olives or other spices and decorations of your choice.
- Preheat the oven to 225°C and bake the bread for 25-30
minutes. Allow the bread to cool before slicing.
Tip
- If the air in the room is cool, you can speed up the heating process by briefly heating the oven to
the lowest temperature. When the lowest temperature is reached, turn off the oven and place the bread in the oven
to rise. After rising, remove the bread from the oven and raise the temperature to 225°C, after which you can bake the bread.

Thank you,good recipe,this is what I have made and this is what I will make with this recipe.
And yes it works in the fridge at night.
I usually make the evening roll dough,pizza dough and now this foccacia dough and
overnight just in the fridge and you get fresh rolls in the morning, what is more wonderful!
