Gluten free Briossi burger bun

Originally a brioche, it is an old French delicacy with roots dating back to the 1400s and 1500s. Brioche is a fluffy, soft yeast dough used to make either breads or sweet pastries. The dough contains a fair amount of butter and eggs. Brioche is ideal for hamburgers because of its soft and dense texture.
Ingredients, 6-8 pieces
2,5 dl milk
2 tsp (5-6 g) dry yeast
1,5 tsp sugar
1tspsalt
2 pcs eggs
100 g butter
n. 6-7 dl Gluten Free Pizza & Street Food Mix from Virtasalmi Grain Products
Preparation
- In a bowl, add 42°C milk and dry yeast, and mix well. Add sugar, salt and eggs, and mix again. Add about half of the flour, allowing the psyllium to take effect and the dough to thicken. Then add the room temperature butter and knead the dough until the butter is completely mixed in with the other ingredients. Add the rest of the flour and let the dough rest under a cloth for about 5 minutes.
- Divide the dough into equal sized pieces and shape them into round buns on a baking sheet. Cover the rolls with cling film and a baking sheet, and leave them to rise for about 1-1.5 hours.
- Preheat the oven to 225 °C. Brush the brioche with egg and bake in the oven for 15-20 minutes.
Tip
- Add a container of water to the bottom of the oven during preheating and baking to increase the humidity
and soften the brioche.
